I do wish authors would stop calling Legolas, 'Legolas Greenleaf'. His family name is Thranduilion (ie, son of Thranduil). 'Greenleaf' is just a pet name for him, used by his mortal friends and by Gandalf, as it is the Westron version of...Legolas.

That apart, you refer to - 'the witch, the dwarf dame, two human women and four hobbit lasses. I get who the dwarf and the hobbits are (partners to Gimli, Frodo, Sam etc), but who are the human women and the witch?

His name is not Legolas Greenleaf. Legolas means green leaf. He is properly Legolas Thranduilion.
Arwen is often called Undomiel, but it is not part of her name. It is an nickname of sorts and would only be used by those very close to her. She is properly Arwen Elrondiel
