I really wanted to like this story, but it's just not that good. It's all over the place, which is kinda crappy. But I forgive you, you'll improve sooner or later and become more accomplished like I did. Unless you're just an idiot, which I hope you're not, because I need you to follow some simple instructions:

The noose is tight and heavy around his neck, feeling like a heavy snake constricting harder and harder with every passing moment. Jeers fill the air, foul, rotten smiles, disgusting-looking grins on face after face. How can a smile make someone look so, so much uglier? And it kept getting harder to breath. His lungs were burning, it's as if someone stuffed newspaper inside them and set them on fire, and now they're just slowly watching him die…and, well…they are. They tore off his beautiful blue jacket when he tried to run, and not a single one of them stopped to ask why someone like him had so many scars and cuts on his body.
Why would they? People like them…even some OF these "fine folks" had given him those ugly marks on his frame. He'd almost made it into the house to close and lock the door when someone got lucky and actually lasso'd him, yanking him down the front steps, and now…now they were hanging him in front of his own home. If this was only just a month ago maybe his father would be rushing out to save him, but no he's on his own.

Awww I liked Shennong and China :( Tai Lung is evil! (I mean Shennong sold mud so like... maybe he deserved it?)
I was going to comment on how cheesy it is to name someone China... when they're from China- but you already did that in-story (and it was glorious). I love the idea that people are scared of toads because they think the warts are contageous XD
The antics of Shennong and his wife were a joy to read and while 'Crane on a Wire' is probably my least favourite LoA episode (off the top of my head anyways... I'm sure there are worse ones...) I'm glad that inhaler thing got a well- a creation myth. This was one hell of a hilarious read. 'Who's in your bed? I need to know!' XD

I wouldn't call it sloppy. I think this is a nice addition to your little... documentary? Mockumentary! (And I dont mean that in a bad way). I think Mantis doing acupuncture is one of my favourite franchise gags. Not only because the first scene was hilarious- but also because of all the little addition which you have referenced here. Like treating Shifu! I almost wish eye acupuncture had been mentioned XD I guess one of Wei Ning Cu Sen's descendants made a tiny mistake... Or Mantis misread the charts...
Hehehe. I like that Wei Ning Cu Sen (some long name...) discovered it by accident. Those porcupines, always sticking their quills in unwanted locations. Although... I want that scene displayed now.
"Doctor... you just fixed my back."
"I er- did?" He wasnt even the doctor. The doctor had a day off!
"Please continue with this treatment!"
"Er... sure?" Wei tugged out one of his looser quills and shoved it into his patient's back.
"AAAAAAAAAAAAAAAAAAAH!"
It did not seem to work though... Wei sighed. He was definetly getting fired for this...

I... love... this... series!
You are exploring KFP from the point of view of already-deceased nobodies. That is something I haven't seen before. The documentary style of this? I haven't seen it done (by anyone except me... once) before and this is beautifully refreshing.
This story isn't about characters (although there are fun characters in it, the focus is not on their development/growth), it doesn't *really* have a plot- it's just lore galore! And honestly... Lore is criminally underdone.
I love the Oogway/Kai nod- sets the scene really well. So this was during the 'Warlords' Period, eh? Lovely. And the Village of Peace, eh? Guess it wasn't big enough to be a Valley yet XD
The discovery of the Sun Orchid is another thing I have never seen before

I... honestly... This is good! In a sad, brutal kind of way.
The dialogue and the diary entries were all wonderfully written and that ending was rather... geez it was sad but at the same time you built up to it nicely and there weren't many places it could go. Rip Chi chi and Pangfua, we barely knew ya.
Don't worry about Nabiki not being finished yet- I tend to always get stuck on the story climaxes and divert my attention to another story until inspiration hits me and that's worked fine for a while so there's nothing wrong with this kind of semi-drabble. I spotted the references btw, especially liked the ones with Tai Lung (I guess Pangfua was right Kung Fu is such a waste XD).
Also interesting that this story plans to focus on healers- they rarely get any limelight but are, as Pangfua points out, very important to basically everyone. I also liked Pangfua as a character. She has a very dry sort of humour that fits perfectly well into the story.
