You don't seem to understand a lot of things about Dragon Ball, but first I would like to say that your main character seems incredibly boring. He doesn't even react to being sent to another universe and being stuck in the body of the most evil character in Dragon Ball, it makes him seem like a sociopath, which makes it seem like you are a sociopath since this is a self insert fic. Now, here are things you got wrong about Dragon Ball.
1, The Frieza fight in the anime was mostly filler, it's a lot shorter in the manga, so no, Toriyama didn't extend it because he had writer's block, he actually wanted to end the series after the Namek Saga, but Toei likes money so they pressured him to continue the manga.
2, Toriyama didn't write the characters in Super, he just laid out short plot synopses that Toei and Toyotaro had to make into an anime and manga respectively, so it's not Toriyama's fault that Goku was written in Super in a way you don't like, because he wasn't writing the character. The only part of Dragon Ball Super Toriyama actually wrote was the Battle of Gods and Resurrection F movies, and also the Broly movie.
3, Frieza deciding to copy the Namekian regeneration was only in the English dub, he never wanted to do that in the original Japanese version.
4, Frieza's race doesn't have an official name. The closest thing to an official name is simply 'Frieza Race' from a Toriyama interview in 2014. The only time they are referred to as Frost Demons is in a throwaway line by Cell in Xenoverse, which isn't canon.
5, All of this info can be found on the Dragon Ball wiki, which you seem to think is a credible source of information, which makes me wonder how you got all this stuff wrong.
