while I will not pick this up/ write a continuation/adaptation (I can outline/come up with a synopsis, but writing a full-fledged story isn't in my capabilities) I will instead share my ideas for one possible direction where this could go (and if you want to one day continue this/use any of these, even in an entirely different fic then feel free)
Hermione somehow comes up with a (probably flimsy, but generally accepted by their friends) reason for why this is all Harry Potter's fault since only Potter Luck could have caused something like this to happen- which their friends and even Harry have to admit that this certainly sounds like something his Luck would cause- the only thing Hermione and everyone cannot figure is why it happened to Her.
Then the goblins present the reason: since she is a Potter of course she has the Potter Luck too.
(Not sure if she's adopted/lost/hidden potter child [and if so perhaps actually Harry's older sister?], if she inadvertantly became a Potter Vassal or some such, if she and harry somehow are married [which was the first thought, quickly followed by how cliche that seems and that I would like some twist instead which led to other ideas], if harry had inadvertantly "adopted" Hermione as his elder sister, there's the soulmate cliche, and the life debt one [multiple ones owed to each other possibly escalating the bond they create exponentially?], perhaps something with the timeturner [being shared/looped around them both when they're not meant for multiple people bound them together somehow?], and I am sure there are plenty of other ways to story-it-out, but the point remains that in the end she was magically recognized as a Potter and thus effected by Potter Luck). The end result of this being that due to Harry having a connection to the Goblin King they are obligated to care for him and this leads to everything around him (horcruxes, conspiracies, book writers profitting on his name/fame, mistreatment by relatives and professors, Sirius Black's Case, EVERYTHING) coming unraveled and/or into the light. This only further fuels Hermione's opinion that somehow this is all Harry's fault, since her becoming the Goblin King led to so many benefits for Harry, not that she begrudges them- it's just the principal of the matter: Its all Harry's Fault.
A previous reviewer pointed out several possibilities for how Hermione could get challenged and somehow luck out/win those challenges, and that would fit with the Potter Luck theme, so those kinds of plot points happening (even if as background/filler/omake) would definitely be appropriate (and amusing). But a major Hermione-centric plot line would be to have the fact that Hermione is a Witch, and/or that the Goblin King is a Witch/human, lead to the Goblin nation/race now legally having to be better treated under ICW law that the Ministry is Magically Bound to uphold. Thus simply by the fact that Hermione is the Goblin King she is already helping them. But this is Hermione, if she's going to be the King she is going to do Everything that she possibly can for her new people. And via the ICW laws and the fact that Gringotts is The Wizarding Bank Hermione is also able to drag the British wizarding world into the 20th century (even with the 21st fast approaching, they are so far behind the times that there just simply isn't the necessary infrastructures [physical, social, governing, etc] to bring them further with just an improved economic infrastructure as a basis for the push- this could also lead to a further "b-plot" with Harry and/or sirius/etc leading a push to establish some of those other infrastuctures needed for further advancements). Hermione's changes and edicts were done with the belief that she was doing her best to better the lives of both Goblins and Wizarding kind, but she cannot lie that she also held some hope that said drastic changes would lead to her being challenged and defeated. Instead Potter luck had her changes cause, by sheer accident, the plots against her to fail in such ways that they either enrich her personally or her people as a whole, or perhaps gain the Goblins respect in wizard-kind's eyes or in some other way lead to Hermione being one of the most popular and beloved Kings in Goblin history. (A couple amusing snippets this would lead to as well, Hermione would be written about in History Books, and most importantly: she would feature in the newest edition of Hogwarts A History as the first Goblin King to attend Howarts as a student [which would also serve as precedent for other goblins to be allowed, just as her having a wand would be a basis for Goblins to sue for the right to wield a wand, if they desire, though that would likely have happened in response to Umbridge/Malfoy/Etc trying to have Hermione's wand snapped on account of her being the Goblin King and Goblins not allowed wands, and where some of the ICW laws would have first come in to play], and the other amusing thing Hermione's popularity co
