My gut feeling is Ahsoka probably told Bo-Katan off-screen that Anakin Skywalker became Darth Vader; hence the possible reason for Bo-Katan's reaction.

It's nice how you have Bo-Katan only realize just now that Luke's last name is Skywalker; considering Anakin was one of the last Jedi (other than Obi-Wan and Ahsoka) she saw before the rise of the Galactic Empire. Also, I have to wonder how Boba Fett will feel about Luke's involvement and the fact that he missed out on seeing Luke again after 5 years.
