I hope Jon finds some useful things and knowledge to take back to the North with him. Even things such as new healing plants to use (those can be grown now they can make their own glass houses) or fruits and vegetables to grow or books on architecture and engineering or books on healing, things he hasn’t come across in Westeros or through his own experiments.
Perhaps he can even offer people a new life in the North? Teachers, scribes, engineers or healers will all be useful.

With the clear glass, as well as establishing more glass houses, they also use the glass to seal off some of the walkways in the courtyard next to the walls of the castle. That way people will still be able to get sunlight during winter without going outside into the elements but they could also plant food to grow alongside the glass away from the walls, e.g. tomato plants, or potatoes or other vegetables and herbs. Things like wheat grow straight so those could be planted too, all to increase their food production. Winterfell is kept warm thanks to the hot springs in the walls, so those areas covered by the glass walls will also be warm and ideal for growing crops and vegetables, even if the soil bed for the plants is narrow. Every little helps.
They should also expand the number of chickens they keep and make sure they are kept warm (the mash from the barley etc can be fed to the chickens) to increase the amount of eggs they produce throughout the winter.
Jon should design a crystal shaped glass so it can be set in the roof of a building to help disperse light and heat. That’ll save on wood burning etc.
