Given Gray and Waver’s upset reaction, and the servant’s surprise, my first thought is a Saberface, but that doesn’t really fit the grey eyes bit. Except for Okita, but the catalyst’s description doesnt really match up to anything that would be related to her.
Given it’s implied that they were trying to summon Iskander my next guess would be Hephaestion, but I’m not sure why they would react like that to her summoning…

Pale blue is the eye color of Morgan, so either of the two is out. And no Artoria has grey eyes. But as far as Saber faces go...
Well, they either summoned Hephaestion. Ooor they summoned Okita, the ONLY Saber face with grey eyes. Of course, the only exception to the "No Japanese Servants" Rule is Sasaki Koujiro, and he isn't a true Servant really. Then again, this is fanfiction, and this Grail is already malfuctioning.
Hell, is more than possible to even summon Ibuki-Douji here. No, seriously. By most standarts, even from other gods, she is a goddess. But by HER standards, and the ones of her daddy, Ibuki is actually just a demigod just like Heracles.
Yes, it's official knowledge that she is half-human. Most likely, because Orochi was "devouring" his sacrifices the fun way, instead of the literal way. And well, is safe to assume given what we know of Ibuki that each of the eight heads of Orochi was as powerful as a god. Maybe each head was as powerful as Susanoo's full strenght or more. Which is why despite being actually a demigod and only having the power of one head of Orochi, even if that's the main one, Ibuki-Douji is most standarts save her own and her daddy, a goddess. Because Orochi strenght was really "too-OP-please-nerf" kind of ridiculous.
So by that tecnicality, her being actually, even if quite an OP demigod, it is viable to summon Ibuki-Douji in a Holy Grail Way just as one can summon Heracles, Karna or Gilgamesh. Expect if that happens for her to bully the Angry Mango: her blessings are curses and her curses are blessings. And she eats mosts other curses and poisons as breakfast.

So Saber is there now. Which means Shirou will become super tanky. Because Saber’s presence is capable of making Avalon work even if you aren’t in a contract with her. We saw that with Irisviel in Zero and Shirou in UBW.

Poor people. Gray is confused about her relationship to Shirou and now she gets Artoria's like servant, while she would like to be miles away from her. Sakura is under Rider's influence and she just toys around her while pushing her towards Shirou. Rin is in a conflict with Luvia while different incidents happen around her. Luvia has a bloodpreasure because Shirou keeps doing stupid things, Shirou keeps having trouble to help Bazett, keep Ayako away from trouble and Illya sees how Shirou's harem keeps growing. Only Rider seems to have a laugh of her life.
